Those who have no existing routines (they don't transfer from the new app) - like those who've only used the new app and want to start using the Classic app - are SOL. That may sound fine, but one can no longer add new routines to the Classic app: one can run existing routines, but not add new ones. The SmartThings Classic app has Apple Watch support and one can use both apps, but it only allows one to run routines. Will this work even if i have the new app? So far as your Apple devices are all concerned, you're running HomeKit, and not SmartThings, and can control everything with no further apps required. Once everything is in place, this system works well.

There are three possible hubs you can use: an Apple TV (3rd gen or later), a HomePod, or an iPad (note however that the iPad must remain inside your LAN for this to work). The only thing to note with all of this is that you won't be able to use your Apple Watch to control your devices outside your LAN, unless you also have a suitable HomeKit hub.

Note that HomeBridge won't give you access to your SmartThings routines - it just gives access to devices, so you may have to re-do selected routines (mores for user-activated routines if you have a routine that turns on a light when a door is unlocked in SmartThings, that will still trigger even if you unlock the door using Siri on your Apple Watch). This will emulate HomeKit for whatever SmartThings devices you wish, allowing you to control your SmartThings devices from a Mac, iPad, iPhone, Apple Watch, HomePod, or Apple TV using their native Home apps (for everything but Apple TV) or via Siri (including newer Apple TV models).
